    For Garam Masala Powder
  • Grind all spices(green cardamom, black cardamom, cinnamon sticks,star anise, cloves, bay leaf, cumin seeds, coriander seeds, fennel seeds).
  • For Chicken Marination
  • In chicken add red chilli powder, turmeric powder, salt, garam masala powder, nutmeg & mace powder, brown onion, yogurt, chopped coriander leaves, chopped mint leaves, lemon juice, ginger garlic paste, black pepper powder, sliced green chillies mix well and marinate for 1 hour.
  • For Rice Preparation
  • Wash and soak rice in water for 30 minutes. Boil the soaked rice with cloves, bay leaf, cumin seeds, black cardamom, green cardamom, star anise, cinnamon stick, few drops vinegar & oil, salt till 3/4th done and set aside.
  • Heat oil in a wok add marinated chicken mix well cover & cook for few minutes. Add 1 glass water mix well cover & cook further until chicken tenders.
  • Then add biryani masala powder, dried plum, tamarind mix well cover & cook for 5 minutes.
  • For Layering Biryani Rice
  • In another pot first spread boiled rice then spread cooked chicken gravy. Then add chopped mint & coriander leaves, spread garam masala powder. Then again spread boiled rice. In last add dry yellow food color Cover the pot and steam cook for 10-15 minutes on lowest flame over flat pan.
  • Hyderabadi Chicken Biryani is ready to serve with raita & salad.
